TIBICOS (aka Water Kefir)
Basic mix
3 tablespoons Tibi
raisins / organic dried fruit (optional)
1/4 cup organic sugar
1/2 organic lemon (opt)
thin slice ginger
enough Chlorine-free water to fill a good size jar – allow head space
Cover with breathable cloth and secure with rubber band – ferment for 48 hours
Strain and use Tibi to start all over again
Bottle and chill and enjoy or 2nd ferment with added herbs, turmeric and ginger, or seasonal fruit for another 24 hours.
