• Best not to cover any fermentation with oil.
Oil and water do not mix, and kraut will produce its own water.
Putting oil on top of vegetables, bound for fermentation, can rapidly accelerate oxidation causing the oil to become rancid in short order.
And quality oil is expensive.

Use best quality olive oil for sauerkraut perpetual salad.
Massage kale with olive oil for red sauerkraut salad or dips, dressings etc.
