Watermelon Rind Pickles

Lacto fermented watermelon rind pickles – just the right finish to a cheese platter.

Take a few garlic cloves (peeled and smashed)

1 bay leaf

½ teaspoon peppercorns


dill and mustard seeds,

shredded cabbage

watermelon rind (brine if required – after massaging with salt / 2 tablespoons salt – 3 cups of water/ Bok choy juice).

We added some of our own grown organic banana skins.
