What to do with the watermelon rind when finished eating the juicy fruit?
Lacto fermented watermelon rind pickles – just the right touch to a Charcuterie
What you will need:
- Take a few garlic cloves (peeled and smashed)
- 1 bay leaf
- ½ teaspoon peppercorns
- coriander
- dill and mustard seeds,
- shredded cabbage
- watermelon rind (brine if required – after massaging with salt / 2 tablespoons salt – 3 cups of water/ Bok choy juice).
- We added some of our own grown organic banana skins.
