Watermelon Rind Pickles

Finished slurping the succulent watermelon, but what to do with the leftovers? Turn them into a zesty delight with lacto-fermented watermelon rind pickles! Perfect for jazzing up a charcuterie board.

What you will need:

  • Take a few garlic cloves (peeled and smashed)
  • 1 bay leaf
  • ½ teaspoon peppercorns
  • coriander
  • dill and mustard seeds,
  • shredded cabbage
  • watermelon rind (brine if required – after massaging with salt / 2 tablespoons salt – 3 cups of water/ Bok choy juice).
  • We added some of our own grown organic banana skins.
