Take a large knob of ginger and soak in cool water for at least 15 minutes.
With a spoon gently remove the fine papery skin.
Slice into fine slices with a few pieces of turmeric.
Cover with lemon/ lime juice with Himalayan salt.
Add a few fresh lime leaves to top of fido jar.
Over to the fermenting fairies for 2 weeks.

Stir-fry vegetables and protein and make a sauce with soy sauce, sesame oil, ginger, and chopped cilantro.
Sprinkle over all food or add to bliss balls, smoothies etc.
Use as a paste in curry etc.
