Boil eggs, trim the bottoms for a sturdy stand, scoop out a little tomato and plop it on top, then jazz it up with milk kefir soft cheese for the perfect toadstool dots.

Toss boiled eggs into sauerkraut or veggie brine and let them chill in the fridge for 3-5 days – beet kvass adds a splash of vibrant colour inside and out.
