There is so much that is still not totally understood with the fermentation process.

However, peeps with hypothyroidism who ideally need to avoid the cabbage family can offset its effects by adding iodine-rich sea vegetables to crucifer-based fermentables.


Kelp powder mixed in with salt is an easy way.

Use it at the start of playing with your vegetables. We purchase a combined Tasmanian kelp and Himalayan fine pink salt to make the job easy-peasy!


Cabbage and kelp is a favourite for our 20 litre crock.

Like a classic sauerkraut – replace caraway with dried kelp.

Seaweed added to cabbage and fermented is divine!

The fermented seaweed is great for sushi or rollups and as a final addition to soup and salad.


The pics are seaweed kimchi + horseradish, carrot and Wakame Sauerkraut + Seaweed kimchi.
