Bircher

Gluten-free, easy on the digestion

¼ cup amaranth + ¼ cup quinoa, soaked and sprouted

Dash of each of the following:

Soaked and well –rinsed cashews

figs, roughly chopped

goji berries

sultanas

coconut flakes

pepita seeds

1 teaspoon hemp hearts

½ teaspoon cinnamon

½ cup coconut milk kefir

dash of lime brine (from fermented ginger and turmeric)

Fresh seasonal fruit

Overnight soak figs, goji, sultanas in a just enough tibi / water to cover them.

To make the bircher, combine the sprouted seeds, soaked fruit and nut mix, coconut flakes, pepitas, cinnamon and lemon oil and toss lightly to combine.

Place bircher in a bowl, add kefir and sliced fruit.

Spoon into jars then sprinkle the top with hemp hearts.
