Baked Papaya

It’s Sunday. What’s for lunch? Baked Papaya / Pawpaw Bomb.

Here’s how to do it:

Pick a 90% ripe but firm pawpaw.

Peel.

Slice off the bottom to stand upright.

Slice open top and scoop out seeds and connecting tissue.

Layering with Mung Dahl, quinoa, tempeh and veggies.

Bake in low oven for about 30 minutes.

Baste several times during cooking.

Surround with roast vegetables, foraged greens and quinoa.

Serve with rainbow of fermenty goodness..
