4 ways with fermented buckwheat

DIY Buckinis + Flour (buckwheat)

Kefir buckinis

Soak raw buckwheat grouts overnight in kefir rinse three times then soak from morning ‘til evening.

Rinse, rinse and rinse some more.

Dehydrate (under 40 degrees C) for 4 or 5 hours (or whenever dry and crisp) – popped!

Add to raw treats

Popped popsicles

Sprinkle popped buckwheat grouts over the top of popsicle mixture (herbal tea and kefir smoothie) for a nice crunch at the base.

Add smoothie ingredients and tisane and blend until smooth.

Pour into popsicle moulds. Add popsicle sticks and freeze until set.

Decorate Remove popsicles by running the moulds under hot water.

Dunk the tips of the popsicles in kefir coconut yoghurt, then sprinkle coconut threads over the top.

Freeze again until set and enjoy. (this is a great way to use left over smoothie mixture).

Buckwheat flour

Blitz buckinis in the blender for a few seconds.

Live granola

Buckinis + some coconut oil and optional raw honey and kefir activated dried nuts or seeds + coconut and fruit of your choice – Incan and Goji berries.

Top with coconut kefir or plain kefir and seasonal berries.
